The best clusters are along Nakasu riverside and Tenjin Watanabe-dori. Each stall seats only 6–10 people — if one is full, try the next. Order tonkotsu ramen, motsunabe (offal hotpot), and mizutaki for the full Fukuoka experience. The liveliest atmosphere is after 21:00 when locals arrive after work.
